Breakfast Bowl

Ingredients for 1 serving:

2 tablespoons of olive oil 

2 eggs, beaten

1 can or 1 cup of cooked black beans

Optional: avocado, lettuce, cheese, sour cream, salsa etc

Instructions:

  1. Heat olive oil in a small skillet over medium heat. 

  2. Pour eggs into skillet; cook and stir eggs until set, 3 to 5 minutes. 

  3. Place black beans in a microwave-safe bowl. Microwave at High power until warm, about 1 minute. 

  4. Place beans in bowl, put scrambled eggs in bowl with beans and top with avocado and salsa, then season with salt and black pepper.
