Indian Chana Masala

Ingredients for 6 servings:
1 cup Garbanzo Beans
1 tsp Baking Soda
3 Tbsp Cooking Oil
2 Sliced Onions
1 tsp Garlic Powder
1 tsp Chili Powder
1 Can of Tomatoes (14 oz)
3/4 tsp Ground Cumin
1/4 Ground Turmeric
3/4 tsp Curry Powder
Salt
Rice (to serve over)
Instructions:
Pre-soak beans! Cover the garbanzo beans with cold water, add the baking soda and soak for ~6 hours.
Rinse, drain, then cover the beans with more cold water and boil for 30-45 minutes, until soft. Set aside.
Put the oil into a large frying pan on medium heat. When hot, add onions and cook for 12 minutes, until golden. Stir frequently.
Add the garlic powder and chili powder, and stir.
Add in the can of tomatoes and cook for 8 more minutes.
Add the cumin, turmeric, curry powder, and as much salt as you like. Stir, then add in the garbanzo beans. Add water to thin the sauce (5 Tbsp) and cook for 5 more minutes.
Serve over rice.
